These products work by absorbing large amounts of water and holding them in their chemical structure. At the same time enabling small amounts of exchange between the water molecules and the air. This results in a much more efficient watering schedule for growers who are frequently stuck with very little rainfall during the summer months.

Some common examples include perlite. Pearlite is made from volcanic glass, pumice stone, or even rice hulls; all of which help to aerate soil mixes while at the same time retaining water.
